You want to try to keep all your frequencies separated so nothing gets cancelled out. Crossovers help you do this. Simply put it cuts off what frequencies the driver it's hooked up to will play. So if you have your xover on your sub amp set at 90Hz, your sub will play whatever the lowest frequency it will play is (20Hz for example) to 90Hz. Now, again an example, you set your midbass from 90Hz to 200Hz, then finally set your highs to 200Hz and up. Hope this helps.
